Ingredients: 300 grams of brown rice; 1 onion; 2 cloves of garlic; 1 leek; 2 small zucchini; 1 l of vegetable broth; 1 glass of white wine; chilli, pine nuts and raisins as needed.
Preparation: Wash and cut all the vegetables, leek, onion and courgette into small pieces. Pour the oil into the pan and fry onion and leek for a few minutes over medium heat, then add garlic and zucchini, followed by a few pine nuts and some chilli. After 5 minutes pour in half a glass of white wine and add the vegetable stock, taking care to mix. Meanwhile, add the rice, once the broth is absorbed, the dish will be ready.
Ingredients: 3 large zucchini; 3 eggs; 50 grams of Parmesan cheese; 100 grams of flour; basil; salt, pepper and peanut oil.
Preparation: Wash the zucchini well. Grate the courgettes and place in a colander and let them rest for about 20 minutes in order to drain the excess liquid. In an oven dish beat the eggs, add salt and pepper and add the Parmesan. Stir in the flour and mix until a homogeneous mixture is obtained. After squeezing the grated courgettes and drying them with absorbent paper, add them to the egg and flour mixture and add the basil you have previously chopped. In a pan heat the seed oil and, when it reaches the temperature, pour about a tablespoon of the mixture into the pan and fry the pancakes. When cooked, drain excess oil on absorbent paper and serve warm.
